The Compass Rose is the Mariner's largest and most elegant restaurant. At tables gleaming with polished silver and fine china, guests dine on an ever-changing potpourri of selections ranging from the latest fusion creations and exotic taste combinations to traditional favorites such as prime rib or lobster, selections for the health conscious and more simply prepared fare for times when overworked taste buds need a respite.
At Latitudes, our smallest restaurant, we've given our chef plenty of latitude for creativity. This reservations-only hideaway features special cosmopolitan cuisine in an intimate setting. Here you'll find tableside preparation of showcase selections from all over the world, plus caviar tastings and other unique culinary events.
La Veranda's wonderfully evocative Mediterranean fare will remind you of a tempting little bistro in Provence or an inviting family-run trattoria in Parma. Think of aioli, fresh garlic dancing in sizzling olive oil and seafood so fresh you'd think they'd just hauled the catch over the stern. The atmosphere is casually elegant, and the cuisine is prepared with lavish loving care. During the day, La Veranda also serves buffet breakfasts and luncheon.
Signatures is the only restaurant at sea to be created and operated by chefs wearing the white toque and blue riband of the Cordon Bleu of Paris, the most prestigious culinary authority in the world. The ambience is classically and elegantly French, of course, and the treasured cooking techniques are those handed down by generations of Cordon Bleu chefs, but the cuisine is far from traditional - a marvelous mixture of culinary delights as inventive and eclectic as tomorrow.
